Biscuit Chicken Pot Pie


Here's the chicken pot pie meal I made for dinner tonight. So easy to make... and super delicious. :)

The recipe: (incase you want to try it)
Brown two finely chopped cloves of garlic in a pan with two to three tablespoons of butter. (I've also added chopped onion too, but not this time) Add approx 2 1/2 tbsp flour and mix with whisk. (med high temp) Add 1 can swanson roasted garlic chicken broth and mix with whisk. Give it just a minute to thicken. Add 1 can cream of chicken with herbs soup mix. Turn temp down to med. Then add about 2 cups chopped cooked chicken. (I usually use left over chicken from a prior whole cooked chicken meal) Add vegetables.. I use frozen. Fresh you'll need to cook longer or precook them.(approx 3/4 cup of each: green beans, corn, diced carrots. 2 cut cooked whole potatoes.. I microwave those in a baggie w/ water) Any veggie you'd like really. Add a little salt & pepper. Simmer for about 15 min or so. Pour into a 9x13 casserole dish and place biscuits on top. (I used grands this time but have covered it with bisquick also) Sprinkle with parsley. (fresh chopped parsley is best but I didn't have any, so I used crushed/dry basil instead) Bake at 400 for about 25-30 min. (until top is nice and brown and biscuits are completely cooked). Yummmmy meal.
